7. Must try local cuisines in Vietnam Cambodia Laos Thailand Myanmar

Must try dishes in Vietnam
Pho: The star of the Vietnamese dishes is undoubtedly the famous Pho Bo Soup. It is the national dish and the Vietnamese eat it also for breakfast. It's a rice noodle soup with finite veal slices.
Bun Cha: One of the favorite dishes of foreigners when they come to Vietnam, is combined dish of rice noodle, lettuce, minced pork, peanuts, pork strips, and vegetables. All that bathed in fish sauce. Tastes as good as it sounds!
Spring rolls Cha Gio and Goi Cuon: Surely the easiest thing to indentify and ask even if you already know them,  you have to try the two types of rolls you find in Vietnam- the Cha Gio (Rice paper roll, usually stuffed with minced pork, mushrooms, rice noodles and vegetables and eaten fried) and the Goi Cuon (Raw rice paper roll stuffed with vegetables, prawns and noodles. Serve at room temperature and dip in the fish sauce).
Bun Rieu: A noodle soup with tomato and crab flavor served with crab meatballs and fried tofu. There are several variants of bun riêu, including bun rieu cua (crab), bun rieu ca (fish) and bun rieu oc (snail).

Must try dishes in Cambodia
Amok: Arguably the most well known Cambodian dish. A coconut milk curried dish less spicy than those found in Thailand. Amok is usually made with chicken, fish, or shrimp, plus some vegetables. It is sometimes served in a hollowed-out coconut with rice on the side.
K'tieu (Kuytheav):  A noodle soup generally served for breakfast. It can be made with pork, beef or seafood. Flavorings are added to the customers taste in the form of lime juice, chili powder, sugar and fish sauce.
Lok lak:  Chopped up beefsteak cooked quickly. Probably a holdover from the days of French colonization. Served with a simple dipping sauce made from lime juice and black pepper, lettuce, onion, and often with chips.
Mi / Bai Chaa: Fried noodles or rice. Never particularly inspiring, but a good traveler’s staple.

Must try dishes in Laos
Mok Pa: Mok Pa is a special food of Luang Prabang that is appreciated by many visitors. This food was made of fish, herbs and vegetables. Mok Pa is served mostly in a banana leaf to bring the sense of nature to enjoy.
Kaipen (Fried Seaweed): Kaipen is made of freshwater green algae collected from the Mekong River in the northern Laos. The algae will be pressed, seasoned and dried in the sun. Frying until crispy and then eating with bong is considered as the best way to try Kaipen.

Must try dishes in Thailand
Tom Yum Goong: This is the iconic delicacy that anyone takes Thailand food tours can’t miss. This shrimp soup is the perfect combination of Thai ingredients such as lemongrass, galangal, kaffir lime leaves, fish sauce, lime juice, and of course, hot chili. Tom Yum Goong is bold, fragrant, and exceptionally spicy, which will definitely fit your taste buds.
Pad Thai: Pad Thai is the traditional fried noodles of Thailand. The noodles are stir-fried with eggs, tofu, onion, and beansprout and flavored with fish sauce, lime, garlic, chili, and sugar. Shrimp or chicken might be added to the dish to add more flavor, yet the vegetarian version with no meat is popular, too.

Must try dishes in Myanmar
Tea leaf salad: The tart leaves are eaten on their own, typically as dessert, but they're also served in the form of lephet thoke, a salad of pickled tea leaves. To make the dish, the sour, slightly bitter leaves are mixed by hand with shredded cabbage, sliced tomatoes, crunchy deep-fried beans, nuts and peas, a splash of garlic oil and pungent slices of chili and garlic.
Shan-style rice: Known in Burmese as nga htamin (fish rice), this Shan (one of the country's main Buddhist ethnic groups) dish combines rice that's been cooked with turmeric and squashed into a disk with a topping of flakes of freshwater fish and garlic oil
Burmese tea shop meal: Myanmar's tea shops aren't just places to sip tiny cups of sweet, milky tea. They also function as a crash-course on various cuisines of Myanmar -- dishes served often reflect the ethnicity of the shop's proprietor. Tea shops run by ethnic Burmese are good places to dig into the world of traditional Burmese noodle or rice dishes such as htamin thoke, a type of rice salad.
